Sweet, Sour and Spicy Olive Pickle

With olives now in the market, here is a quick recipe for a sweet, sour and spicy pickle made with whole olives.

Olives have started to appear in the market. The fruit has many health benefits, and everyone who likes olives loves their sweet, sour and spicy pickle. Many people, however, may not be able to make whole olive pickle properly. Here is a quick recipe for them.

Ingredients


  • Olives, 1.5 kg
  • Vinegar, 1 small bottle
  • Mustard oil, half a litre
  • Panch phoron (five-spice) powder, 1 tablespoon
  • Sugar, 1 cup
  • Chilli powder, 1 teaspoon
  • Turmeric powder, half a teaspoon
  • Salt to taste
  • Whole dried red chillies, as needed

Method


Put a pan on the stove and heat the oil and vinegar. Add the sugar, salt, turmeric, chilli powder and olives together and stir for 3-4 minutes. The olives will cook and swell up well.

Now add the panch phoron powder and whole dried chillies and cook for 5-6 minutes. Meanwhile the olives will be cooked and change colour. Take them off the heat as soon as they are cooked.

Leave covered in the pan like this for 3-4 hours, and the olives will swell and soften. The pickle keeps well for a long time. That is how easily sweet, sour and spicy whole olive pickle is made.
