Crispy homemade nimki for afternoon tea: ingredients and six steps
Cooking

Lightly salted, flaky nimki goes well with an afternoon cup of tea or coffee and is handy for unexpected guests. Rather than buying it, you can make it at home with a handful of ingredients. Agricare24 published the method, based on a Jagonews24 recipe.

Ingredients: 2 cups of flour (maida), salt to taste, 1 teaspoon of black cumin (kalonji), 1 teaspoon of ajwain, a little sugar, oil as needed and water as needed.

Put the flour in a large bowl and mix in the salt, black cumin, ajwain and a little sugar. Rubbing the black cumin lightly between your palms first brings out its aroma. Rub in enough oil, then add water a little at a time to make a stiff dough; it should not be too soft or sticky.

Cover the dough with a clean cotton cloth and leave it for a while so the flour sets and is easier to roll. Divide it into medium balls, roll each one thin and cut it into small pieces with a knife, or into any shape you like.

Heat plenty of oil in a karai, but not too hot. Add the nimki a few at a time, because adding too many at once lowers the oil's temperature. Keep the flame low to medium and lift them out when they turn light golden, then drain off the oil.

Once the nimki have cooled completely, store them in an airtight container and they will stay crisp for a long time. Serve with hot tea or coffee for an afternoon snack.
