Besan laddu is a popular sweet from north India, made from gram flour (besan, ground from chickpeas), ghee, powdered sugar, cardamom and chopped nuts. It is a favourite at festivals and family occasions and can be made at home in a short time.

Ingredients: 4 cups gram flour, 1 cup ghee, 2 cups powdered sugar, 1/4 cup finely chopped almonds and cashews together, 1/2 teaspoon ground cardamom.

Heat the ghee in a pan. Add all the sifted gram flour and keep stirring so it does not stick to the bottom. Roast it gently on low heat for 10 to 12 minutes.

When the flour smells toasted, stir in the chopped nuts and cardamom and take the pan off the heat. Once the mixture has cooled a little, add the powdered sugar and work it in well.

Grease your hands lightly with oil, roll the mixture into small balls and let the laddus cool completely. To help them set, they can be kept in the refrigerator for two hours.

The key step is adding the sugar after the mixture has cooled a little rather than while it is hot. Ajker Patrika credits the recipe to Veg Recipes of India.
