How to Make a Quick Egg Pulao

Egg pulao, made with fried boiled eggs, fragrant rice, milk and whole spices, is a simple and quick dish for busy days off.

Days off usually go on tidying the house, washing the week's clothes and other chores, and not everyone has the time or chance to cook. For those who don't, simple and quick dishes come in very handy. At such times you can make a quick egg pulao. It is easy to make and its taste will delight everyone.

Here is how to make egg pulao.

Ingredients


  • Polao rice: 2 cups
  • Boiled eggs: 5
  • Chopped tomato: 1 cup
  • Chopped onion: 1 cup
  • Green chillies: 5
  • Red chilli powder: 1 teaspoon
  • Cumin powder: 1 teaspoon
  • Ginger paste: 1 tablespoon
  • Garlic paste: 1 tablespoon
  • Cardamom: 4 or 5
  • Cinnamon: 2 sticks
  • Bay leaves: 3
  • Nutmeg powder: half a teaspoon
  • Milk: 2 cups
  • Ghee: 2 tablespoons
  • Oil: 2 teaspoons
  • Fried onion (beresta): 2 tablespoons
  • Water: as needed
  • Salt and sugar: to taste

Method


First heat oil in a pan. Coat the boiled eggs with a little turmeric and salt, fry them golden and set aside. In the same oil, fry the chopped onion with the bay leaves, cardamom and cinnamon. When the onion turns light brown, add the ginger paste, garlic paste, chopped tomato, salt and all the ground spices and fry them well.

Then add the rice and fry for a while. Add the milk and boiling water. When the water boils and mixes with the rice, add the boiled eggs. Sprinkle with kewra water, cover and leave on low heat for 10–15 minutes to steam. When it is done, scatter the fried onion and ghee over it and take it off the heat. Arrange it nicely and serve.
