If you want a healthy and tasty snack on a festive Eid table, oats vegetable cutlets can be an excellent choice. Rich in nutrients, the dish is tasty yet light and easy to digest, a relief among the heavy festive food. It can be made in a short time with ordinary ingredients from the kitchen, and will win over young and old alike. Here is the recipe.

First soak the oats in a little water. Meanwhile, mash boiled potatoes well. Heat a little oil in a pan and lightly fry chopped onion. Once fried, add ginger-garlic paste and cook it briefly, then add chopped carrot and fry for 5 minutes. Next add chopped capsicum, the mashed potato, the drained oats, ground black pepper, chopped green chilli and salt to taste. Mix well, fry for 5 minutes and take off the heat.

Now mix the fried mixture well with chopped coriander leaves and a little egg, and shape it into cutlets. Dip each in egg, roll in breadcrumbs and fry in hot oil until brown. Once fried, serve on a plate of your choice.
