Make Poa Pitha With Ripe Mangoes

Juicy ripe mangoes still in the market at the end of summer can be turned into soft, fragrant poa pitha at home.

Fruits

Juicy ripe mangoes are still available in the market at the tail end of summer. This delicious fruit is not only for eating sliced; it can also be used to make a range of tasty dishes.

You can easily make soft, fragrant poa pitha with a different flavour at home using ripe mangoes. It can be a great dish for an afternoon snack or for entertaining guests. Here is a simple recipe.

Method

First blend the mango pulp well into a smooth paste. Mix the paste with flour and semolina, then add milk a little at a time to make a thick, smooth batter.

Meanwhile, boil sugar and water to make a light sugar syrup. Heat oil with a little ghee in a karahi and fry the poa pitha one by one, using a measured amount of batter for each. As soon as each pitha is fried, dip it in the syrup while still hot. When all the pithas have soaked up the syrup well, lift them out, arrange them on a serving plate and sprinkle chopped nuts on top before serving.
