Recipe for Wood Apple (Kodbel) Pickle

With wood apples plentiful in the markets, here is how to make a tangy kodbel pickle at home.

Who doesn't like wood apple (kodbel) with black salt? For those who love sour flavours, kodbel is a favourite fruit. But did you know it can be made into a mouth-watering pickle? Kodbel is plentiful in the markets now, so you can easily make kodbel pickle at home. Here is the recipe.

Scoop out the inside of ripe kodbel and mash it well. Put a karai on the stove and add oil. When the oil is hot, add garlic paste, panch phoron and pieces of dried chilli, and fry the spices well.

Then add the kodbel and stir for a couple of minutes. Mix in vinegar and sugar and stir well. Now add salt, black salt and chilli powder. When oil rises to the surface of the pickle, turn off the stove and take it off the heat.

The pickle can be stored in an airtight jar.
