On a hot afternoon or at teatime you want something cold and sweet-sour, and that is when green mango comes to mind. This seasonal fruit is not limited to pickles and sherbet; it can also make a wonderful dessert.

The sourness of green mango and the sweetness of pudding create a flavour you will want again and again. The recipe is very easy to make with household ingredients and could become your new favourite dessert this summer. Here is how to make green mango pudding.

First peel the green mango and cut it into pieces, then blend the pieces. At the same time, deseed and chop a green chilli. Blend all the ingredients except the agar agar with water and strain. Then mix in the agar agar and heat it on the stove, turning off the heat once it comes to the boil.

Finally pour it into a dish and let it cool. Once cool, put it in the normal fridge (not the freezer) for the pudding to set. When it has chilled and set, cut it and serve in your favourite bowl.
