Carrot Rasmalai Recipe

Carrot rasmalai, made with ordinary household ingredients, brings a new colour and flavour to a familiar dessert for festivals or guests.

Cooking

If you want to give familiar rasmalai a little twist, carrot rasmalai could be a lovely surprise. Made with the natural colour and light aroma of sweet carrots, this dessert looks tempting and tastes different. It is easy to make with household ingredients and brings something new to a festival or a table for guests. Here is a simple recipe.

Making the carrot balls

First wash the carrots, chop them and boil them. When they have cooled, blend them, and set some of the blended carrot aside in a separate bowl. Put ghee in a pan, stir the rest of the blended carrot for a while, then add semolina and half a cup of milk powder and keep stirring. When it turns sticky like halwa, take it off the heat. Shape it by hand into round balls like sweets and steam them for a few minutes.

The milk syrup

Meanwhile, mix milk powder and sugar into liquid milk and heat it. When it comes to the boil, add the carrot paste you set aside and chopped nuts. Now put the carrot balls into the syrup and simmer them for 10 minutes. Your carrot rasmalai is ready. When it has cooled, top it with chopped nuts and serve in your favourite bowls.
