Make Restaurant-Style Burnt Mango Kaji at Home

Fire-roasted green mango, garlic and chilli make pora amer kaji, a cooling Chattogram favourite that is easy to prepare at home.

In the heat of summer, a glass of cold, sweet-and-sour drink can take away tiredness in a moment. All kinds of sherbet are easy to find in the market, but homemade flavour is something else, and even better if it tastes like a restaurant's.

Pora amer kaji, made by burning green mangoes over a flame, is not only tasty but also very effective at keeping the body cool in the heat. With a few simple ingredients and a little time, you can make this drink at home. Here is the recipe.

First, roast the green mangoes and garlic over the fire. Then mix fried dried chillies, the roasted garlic cloves, salt, chilli powder and mustard oil together well.

Now remove the skin and stone from the burnt mangoes and mash the flesh. Add the rest of the ingredients to the mashed mango and mix thoroughly. Finally, add drinking water as needed to make this traditional Chattogram sour dish, and serve the pora amer kaji with hot rice.
