Beyond Meat takes its mycelium steak to Sprouts stores across the US

Beyond Meat's whole-cut steak, made from wheat gluten, fava bean protein and mycelium, is now in every Sprouts Farmers Market store, as the company faces a seventh quarter of falling sales.

Beyond Meat has put its mycelium-based steak filet on sale in all Sprouts Farmers Market stores across the United States, days before a quarterly earnings report that analysts expect to show another fall in sales, Green Queen reported. The whole-cut product, which reached shops earlier this year, is also sold at Wegmans, H-E-B, Meijer and Erewhon.

The filet is built on wheat gluten, fava bean protein, avocado oil and mycelium, the root-like threads of fungi, with small amounts of brown rice powder, oat bran and fibre, malted barley flour, apple extract, beet juice colour, spices, vinegar, a starter culture and salt. Its whole-cut structure copies the texture of muscle fibre, which plant-based meat has long struggled to match. Each frozen 127 g cut gives 28 g of protein, 3 g of fibre and 1 g of saturated fat, and carries Clean Label Project and Non-GMO Project certification.

Beyond first served the steak last year through restaurants, including Boa Steakhouse, Ladybird and Next Level Veggie Grill, then sold it on its own online shop, where it became the top-selling item, before moving into grocery stores this year. Founder and chief executive Ethan Brown called it a product with "the potential to be a gamechanger for centre-of-the-plate protein".

The rollout comes as the company, now also called Beyond the Plant Protein Company, tries to steady its plant-based meat business. Revenue has shrunk for six quarters in a row, including an 8% fall in the second quarter of 2026, and analysts forecast an 11.6% drop to $62 million for the third. Beyond has also moved into protein drinks, protein powder, jerky bars and whole-food burgers under a new brand, Phytosphere. The report was written by Anay Mridul.
