If you want something light and healthy on Eid morning before the heavy food, you can make banana pancakes. Bananas are full of nutrients, including sodium, potassium, vitamin C and vitamin B6, which help give the body quick energy. These soft, tasty pancakes can be eaten not only on Eid morning but also as an afternoon snack.
Ingredients
- 2 bananas
- 1 cup flour
- 1 egg
- 1 tablespoon sugar
- A little salt
- 1 pinch baking powder
- Half a cup of milk
- 2 tablespoons melted butter
Method
First mash two ripe bananas well. In a large bowl mix the flour, sugar, baking powder and a little salt thoroughly. In another bowl whisk the egg, milk and melted butter or oil together into a smooth liquid.
Gradually mix the liquid into the dry ingredients. When everything is well combined, add the mashed banana and fold it in lightly. Take care not to overbeat the batter, as the pancakes may turn hard and lose their softness.
Heat a non-stick frying pan over a medium flame. When it is hot, pour half a cup of batter into the middle of the pan and let it spread into a round by itself. After a while, when small bubbles appear on top, it is time to turn it. Flip the pancake carefully and cook until the other side is golden.
When both sides are nicely golden, take the pancake off. Make all the pancakes this way. Serve hot with honey, fresh fruit or toppings of your choice.
