Biryani does not need meat to be good. A recipe on NTV's lifestyle page makes a vegetarian biryani at home with cauliflower, carrot, potato and paneer.

Ingredients: half a kilo of basmati rice, half a cup of chopped cauliflower, half a cup of cubed carrot, half a cup of cubed potato, half a kilo of paneer, a pinch of ground nutmeg and mace, 10 cashew nuts, two pieces of cinnamon, three cardamom pods, a little chilli powder, ghee as needed and salt to taste.

Method: heat ghee in a pan and fry the cubed paneer until golden, then set it aside. Fry the cauliflower, potato and carrot in the same ghee.

Add the whole spices to the pan, then the basmati rice, washed in advance, and fry it. Stir in the chilli powder, nutmeg and mace, chopped cashews and salt, then add water.

When the water comes to the boil, stir in the fried vegetables and cover. After a while add the fried paneer, stir again and cover. Once the rice is cooked, turn off the heat and leave it to rest on dum for a few minutes before serving.
