How to Make Traditional Dudh Semai for Eid

Dudh semai, vermicelli cooked in sweetened milk, remains the favourite sweet of Eid morning; here is how to make it.

Eid means a variety of sweet dishes, and semai is always on the list. Its many tasty versions are mouth-watering, but among them all, dudh semai never loses its appeal. On Eid morning its taste seems to add to the joy of the festival. Here is how to make special dudh semai.

Ingredients


  • Milk: 1 litre
  • Sugar: 1 cup
  • Semai: 1 cup
  • Ghee: 1 tablespoon
  • Chopped nuts: 1 tablespoon
  • Raisins: 1 tablespoon
  • Cardamom: 2-3 pods
  • Cinnamon: 2 pieces

Method


First fry the semai lightly in a pan with a little ghee. This improves its aroma and flavour.

Then bring the milk, sugar, cardamom and cinnamon to the boil together in a pot. When the milk boils, add the fried semai and cook over medium heat for a while until it thickens.

When the milk has blended into the semai, add the chopped nuts and raisins and stir for a few minutes, then take it off the heat. Serve once the semai has cooled a little.
