Winter is the season for all kinds of pitha, and homes everywhere make many varieties at this time. One of the most popular is chitoi pitha, which can be enjoyed dipped in syrup or with various kinds of bhorta.
Alongside the traditional chitoi, egg chitoi has now become quite popular. Its special feature is that it needs no meat: the egg alone makes it tasty and nutritious. It can be made in a short time for a morning or evening snack. Here is how to make egg chitoi at home.
Ingredients
- Rice flour: 2 cups
- Flour (maida): 1 tablespoon
- Pepper powder and chilli flakes: to taste
- Baking powder: 1 teaspoon
- Eggs: 1 per pitha
- Chopped onion, chilli and coriander leaves: as needed
- Salt: to taste
- Lukewarm water: as needed
Method
First make a smooth batter of medium thickness with the rice flour, salt and enough water. Lightly oil a chitoi mould or non-stick pan and pour in some batter with a round spoon or small bowl. Wait a little while.
When bubbles start to appear on top of the pitha, break an egg on to it. Sprinkle pepper powder and chilli on top, then add a little salt and chopped coriander. Cover with a lid and wait 5-6 minutes.
When the pitha is fully cooked, take it off. Make the rest the same way. Serve the spicy egg chitoi with shutki (dried fish) bhorta or coriander bhorta.
