Crisp samosas with a spicy shrimp filling make a change from the usual afternoon snack.

Eating the same kind of snack every afternoon can get monotonous. For a change of taste, you can make crisp shrimp samosas at home. With a spicy shrimp filling and a flaky crust, they will please everyone from family to guests. Here is the recipe.

First remove the heads and tails of the shrimp, clean and wash them well and chop them finely. Heat oil in a karai and fry chopped onion and green chilli until lightly browned. Add ginger paste and garlic paste and stir-fry for a while. Now add the chopped shrimp, salt to taste and ground black pepper and fry well. When the spices are cooked through, add half a cup of water, cover and cook for about 5 minutes. When done, take the filling off the heat and let it cool.

Meanwhile, mix flour with salt, a little oil and enough water to make a soft dough. Divide it into small balls and roll each into a thin round. Cut each round in half. Fold each half into a cone, fill it with the shrimp mixture and seal the edges well. Make all the samosas the same way.

Finally, fry the samosas in hot oil until brown and lift them out. Serve hot with your favourite sauce or chutney.
