Semolina can be used to make all kinds of dishes, from sweets to snacks, and because it is easy to cook it is popular in home kitchens. If you want a sweet with a different taste beyond the familiar semolina halwa or payesh, try semolina orange laddu.
Made from semolina and fresh orange juice, this sweet looks attractive and tastes delicious. The small laddus make a fine treat for guests or for the family.
How to make orange laddu
First, add a little ghee to a karahi and fry the semolina well over a low flame. Meanwhile, mix orange food colouring to taste into milk that has been boiled and slightly thickened in advance.
Pour the coloured milk into the fried semolina and keep stirring. After a while the semolina will absorb the milk and thicken. Then add fresh orange juice, stir well and cook until the mixture is completely dry.
Before turning off the heat, mix in a little ghee and powdered milk. Take it off the stove and let it cool a little. When it is just warm enough to handle, shape it into small laddus.
To make the laddus look like oranges, roll them between your palms and press lightly. Split a cardamom pod, remove the seeds and use only the skin, setting it on top of each laddu like a leaf. Finally, push in a clove to look like the orange's stalk.
Your orange laddus, looking just like little oranges, are ready. Arrange them nicely and serve.
