Sweeten Your Day with Ripe Mango Payesh

An easy recipe for payesh, a rice pudding, made with blended ripe mango, thickened milk, nuts and raisins.

It is hard to find anyone who does not like mangoes, and in mango season almost everyone makes all kinds of dishes with them. Green mangoes go into pickles and drinks, while ripe mangoes are used for tasty desserts.

You can make payesh with ripe mango, and once you have tasted it, the flavour will stay with you. Here is an easy recipe.

Ingredients


  • three-quarters of a cup of polao rice
  • 1 litre milk
  • 2 mangoes, blended
  • sugar to taste
  • salt to taste
  • 2 tablespoons nuts
  • 2 tablespoons raisins

Method


First boil the milk until it thickens. Add the rice to the thickened milk and keep stirring. When the rice is cooked, mix in the sugar and salt.

When the water released by the sugar has dried off and the mixture has thickened a little, add the raisins and nuts. Once the rice is done, add the mango, stir, and take it off the heat as soon as it comes to the boil.

Always use ripe, sweet mangoes for payesh; if the mango is sour, the milk will curdle.

Pour the payesh into a serving dish and decorate with nuts and raisins. If you like, chill the mango payesh in the fridge before eating.
