Ripe Mango Barfi

A simple recipe for mango barfi made with just four ingredients: mango, sugar, milk and desiccated coconut.

The mango is the king of fruits and a favourite of young and old alike. Ripe mangoes have started arriving in the markets, and all kinds of dishes can be made with them, among them mango milkshake, mango ice cream, mango mousse, mango custard and mango lassi.

But have you ever eaten mango barfi? You can make it with just four ingredients. Here is an easy recipe.

Ingredients


  • Mango, 1 cup (chopped)
  • Sugar, 1 cup
  • Milk, half a cup
  • Desiccated coconut, 2 cups

Method


First blend the chopped mango well with the milk in a blender. Pour the mango paste into a pan, add the sugar and keep stirring.

Then mix in the coconut thoroughly and cook for about 20 minutes. Stir frequently so that it does not stick to the bottom, and keep stirring until the mixture comes away from the sides of the pan.

Now transfer the mixture to a dish and level the top with a spoon. Wait 30–40 minutes; once it has set firm, turn the dish upside down onto a plate.

Then cut the mango barfi into the shape you like. Once you taste it, you will not forget it.
