Raw jackfruit is plentiful in the markets in this hot season. Full of flavour, aroma and nutrients, the vegetable is known to many as "poor man's meat". Whether in a thin curry with rice, a dry bhuna or a spicy dish, raw jackfruit has its own appeal in every kind of cooking.
It is not only tasty: it contains fibre, vitamins and minerals that are good for the body. So now is the time to fill the kitchen with the aroma of raw jackfruit. Here is an easy and delicious recipe.
First cut the raw jackfruit, wash it well, boil it for a while with salt and turmeric, and drain off the water. Heat mustard oil in a pan and temper it with cinnamon, cloves, cardamom and bay leaves. Then add all the spices except the garam masala powder and fry them well.
Once the spices are cooked, add the prawns and the boiled jackfruit pieces and mix well. Cover and cook over a medium flame for 15 minutes, lifting the lid now and then to stir and making sure nothing sticks to the pan. Finally, sprinkle over the garam masala powder before taking it off the heat and leave it covered a little longer. Your raw jackfruit dish is ready.
