Poa Pitha Without Soaked Rice: A Recipe

Poa pitha can be made easily with dry rice flour instead of soaked rice, using a few ingredients and little time.

When winter comes, Bengali kitchens fill with the smell of pitha. Poa pitha means something soft, sweet and traditional. Many people think that making it means the bother of soaking rice first. This recipe changes that: tasty poa pitha can be made very easily with dry rice flour, with a few ingredients and in little time at home.

Ingredients


  • Dry rice flour: 2 cups
  • Plain flour (maida): half a cup
  • Molasses (gur): 1 cup
  • Salt: a little
  • Water: as needed
  • Oil for frying

Method


First soak the dry rice flour in lukewarm water for 30 minutes. Then mix the soaked rice flour well with the molasses, plain flour, salt and as much water as needed.

Heat oil in a karai. When the oil is well heated, drop in the batter one pitha at a time with a round spoon. Keep the heat at medium and fry both sides well. When they turn golden, lift them out onto tissue paper. The poa pitha is ready; serve it in a bowl of your choice.
