Many kinds of pitha can be made with palm fruit, and one of the best known is gorgora pitha. You can make it at home with just a few ingredients. Here is how to make this delicious pitha.
Ingredients
- Palm pulp, 1 cup
- Sugar, half a cup
- Salt, a little
- Ghee, 1 tablespoon
- Grated coconut, half a cup
- Thick liquid milk, half a cup
- Rice flour, as needed
Method
Put a pan on the stove over a low flame, add ingredients 1 to 6 and stir well to mix. As soon as it comes to the boil, add the rice flour. Stir the rice flour into the palm pulp and cook it to make a dough.
The dough for this pitha is cooked the same way flour is cooked for making rutis. Take it off the stove and knead it well by hand into a soft dough; kneading it soft makes a nicer pitha. Then take a little dough at a time, place it on a ruti board, press lightly and make both ends a little thin.
This pitha looks like hand-cut choshi pitha or semai pitha. Semai pitha is a little smaller, and these are a little larger.
If you have a banana plant sheath to hand, peel off its thin outer skin and the inside has a net-like texture. Place the dough on that net, press lightly and pull, and you get a pretty design. You can also make the design using a plastic sieve from the kitchen.
When all the pitha are shaped, steam them. Spread a thin, soft cloth in the steamer, lay all the pitha on it and cover. Steam for 15 to 20 minutes and take off the stove, and your palm gorgora pitha is ready.
