Nakshi pakon pitha is as attractive to look at as it is tasty to eat. There are several kinds of pakon pitha, including nakshi pakon, sundari pakon, mug pakon, daler pakon and sujir pakon. Of these, nakshi pakon is quite popular, and you can easily make it at home. Here is the recipe.
Ingredients
For the pitha:
- Flour (maida): 2 cups
- Milk: 2 cups
- Salt: 1 teaspoon
- Egg yolk: 1
- Biscuit crumbs: 2 tablespoons
- Ghee: 2 tablespoons
For the syrup:
- Sugar: 2 cups
- Water: 3 cups
- Green cardamom: 3
Method
Heat the milk, ghee and salt together in a pan. When it comes to the boil, add the flour, mix well, cover and leave on a very low flame for 5 minutes. Take the dough into a pan and let it cool a little. Then grease your hands with ghee and knead it well, for at least 10 minutes.
Add the egg and biscuit crumbs and knead for a while longer. Now shape the dough into rounds or egg shapes, then make the nakshi designs with a pitha mould or a spoon. Deep-fry on a low flame until crisp and leave to cool. Meanwhile, boil the water, sugar and cardamom together in a pan for 5 minutes to make the syrup.
Put the syrup in a wide, large dish, because the pitha will swell further when soaked. Add the pitha to the syrup while it is still slightly warm and leave for 4–5 hours, taking care that the pitha do not stick to one another. Then serve the delicious nakshi pakon pitha.
