It is hard to find anyone who does not like doi (yogurt). A cool cup of doi in the heat refreshes you in a moment, and from festivals and gatherings to simply ending on something sweet, there is no substitute for it.
But have you ever tried mango doi? Taste this delicious mango yogurt once and the flavour will stay with you. You can make it easily at home with just three ingredients. Here is the recipe.
Ingredients
- Milk: half a litre
- Sugar: 2 tablespoons
- Sour yogurt: 3/4 tablespoon
Method
Cook the mango purée with sugar for a short while until it thickens a little. Then take it off the heat and let it cool.
Next, boil the milk and sugar. Once it has come to the boil a few times, take it off the heat and let it cool, but not completely: the milk should stay lukewarm. If the milk is too hot, it will curdle as soon as the yogurt is added; if it becomes completely cold, the doi will take a long time to set.
Whisk the sour yogurt and mix it into the milk. Stir well, then mix in half a cup of the cooked and cooled mango purée. Half a cup of purée is enough for half a litre of milk.
Stir well again and pour into the container in which the doi will set. Cover the container and leave it in a warm place for seven to eight hours or overnight.
In a small container the doi will set faster. Once set, keep the container in the fridge for two to three hours, and the mango doi will be fully set and ready.
