It is ripe mango season, and all sorts of dishes are made with mangoes. If you want to eat something different, you can make mango sticky rice, a popular Thai dessert made from sticky rice, sweet ripe mango and coconut milk.
It is a very popular dish in Thailand, and you can easily make this tasty, lightly sweet mango sticky rice at home. Here is the recipe.
Ingredients
- 1 cup binni (sticky) rice
- 2 ripe mangoes (sliced)
- 1 cup thick coconut milk
- Half a cup of sugar
- A little salt
- White sesame seeds, as needed
Method
First wash the binni rice and soak it in water for one hour. Steam the soaked rice in a pot for half an hour. If you do not have a steamer, you can cook the rice with a little more than one cup of water for every cup of rice.
Mix the coconut milk, sugar and salt in a pan and heat it over a medium flame. Take it off the heat once the sugar has melted and the milk has thickened slightly.
While the cooked rice is still hot, mix it well with the coconut milk mixture, cover it and leave it for 15-20 minutes with the heat switched off. In that time the binni rice will blend nicely with the coconut milk sauce and turn soft and sticky. Now peel a ripe mango, cut it into slices and serve it with the sticky rice.
