Cool Down in the Heat with Mango Pudding

With mango season under way, here is a simple egg-free recipe for mango pudding made with ripe mango, milk and agar agar.

Mango season is here, and now is the time to make all kinds of tasty dishes with mangoes. Mango pudding is among the most delicious things made from ripe mangoes, and the sight of this dessert makes anyone's mouth water.

Since mangoes are in season, you can easily make mango pudding with a few ingredients you have at hand. It can be made without eggs. Here is a simple recipe.

Ingredients


  • 1 ripe mango, cut into pieces
  • 2 tablespoons agar agar powder (gelatine can be used instead)
  • 1/4 cup and 3 cups liquid milk
  • Half a cup of sugar
  • Half a cup of powdered milk
  • Chopped pistachios and almonds, as needed

Method


First mix the agar agar or gelatine powder well with 1/4 cup of boiled liquid milk. Then blend the mango pieces with 3 cups of boiled milk in a blender.

Pour the mango mixture into a pan and stir in half a cup of sugar, followed by half a cup of powdered milk. You can use condensed milk if you like, which makes the pudding even tastier.

Keep the mixture on a low flame for a few minutes, stirring constantly. When it comes to the boil, pour in the agar agar and milk mixture.

Keep stirring constantly, with the flame at low to medium. When it boils again, take it off the heat. Take a mould or dish to set the pudding and brush it lightly with ghee.

Pour the pudding mixture into the mould while it is still hot and leave it at room temperature for two hours. Then run a knife around the edge to loosen the pudding from the mould.

Turn it out onto a wide dish and sprinkle chopped pistachios and cashew nuts on top. Cut it into the shape you like and serve. Eaten chilled from the fridge, this pudding brings relief in the heat.
