Recipe: Ripe Mango Payesh

Ripe mango can be used to make payesh, a sweet rice pudding; here is a simple recipe.

Almost everyone makes and enjoys a variety of desserts with ripe mango. If you like, you can also make payesh with ripe mango, and its taste will stay with you after a single try. Here is a simple recipe.

Ingredients


  • Polao rice: three-quarters of a cup
  • Milk: 1 litre
  • Mangoes: 2, blended
  • Sugar: to taste
  • Salt: to taste
  • Nuts: 2 tablespoons
  • Raisins: 2 tablespoons

Method


First boil the milk until it thickens. Then add the rice to the thickened milk and keep stirring. When the rice is cooked, mix in the sugar and salt.

When the water released by the sugar dries off and the mixture thickens a little, add the raisins and nuts. Once the rice is cooked, stir in the mango and take the pan off the heat as soon as it comes to the boil.

Always use ripe, sweet mangoes when making payesh; if the mangoes are sour, the milk will curdle. Pour the payesh into a serving dish and garnish with nuts and raisins. You can also chill the mango payesh in the fridge before eating.
