Make Mango Pancakes at Home

Summer means markets full of juicy, sweet mangoes, and many tasty dishes can be made with them. One of the most appealing and easy is the mango pancake, a recipe everyone from children to older people will enjoy. It makes a great choice for breakfast or a light afternoon snack. Here is how to make mango pancakes at home.

Method


First put pieces of ripe mango, milk, eggs and sugar in a blender and blend well until you have a smooth paste.

Next mix flour, baking powder and a little salt together in a large bowl. Slowly pour in the blended mango mixture and mix gently to make a thick batter. Take care that the batter is neither too thin nor too thick.

Heat a non-stick pan on the stove over a medium flame and brush it with a little butter or oil so the pancakes do not stick. Pour a ladle of batter into the pan; it will spread into a round shape by itself. When small bubbles start to appear on top, one side is cooked, so carefully turn it over. Cook the other side until it turns a light golden brown. Make all the pancakes this way, one by one.

Serve the pancakes topped with honey, maple syrup or chopped fresh mango.
