Recipe: Mango Doi (Yoghurt)

A recipe for mango doi, a set yoghurt made with mango pulp, thickened milk, strained yoghurt and caramel.

It is ripe mango season, and many people make tasty dishes with mangoes, among them mango payesh, smoothies and sherbet.

You can also make doi (set yoghurt) with mangoes, and its taste will stay with you. Here is how to make mango doi.

Ingredients


  • Mango pulp, 1 cup
  • Strained yoghurt, three-quarters of a cup
  • Liquid milk, 1.5 litres
  • Powdered milk, a quarter cup
  • Sugar, a quarter cup, plus 2 tablespoons (for the caramel)

Method


First boil the milk until it thickens. Add the powdered milk and sugar, boil a little longer and take it off the heat. In a wide pan, make a caramel with 2 tablespoons of sugar and mix it into the milk.

While the milk is still lukewarm, mix in the mango pulp and strained yoghurt thoroughly. Pour the mango mixture into the pot in which you will set the doi; doi sets well in an earthenware pot.

Preheat the oven to 250 degrees for 10 minutes. Then switch the oven off, wrap the bowl of doi in a thick towel and leave it in the warm oven for 7–8 hours straight.

Once the doi has set, take it out of the oven and keep it in the fridge for another 2–3 hours. Your mouth-watering mango doi is ready.
