An Easy Recipe for Keema Polao

Keema polao, made in a few steps with everyday ingredients, is a fragrant dish suited to festivals or unexpected guests.

Almost everyone loves polao, and when it is made with keema the flavour is even better. This keema polao can be made in just a few steps with ingredients easily found at home, and its aroma fills the whole house. It is an ideal dish for festive meals or for guests who turn up unexpectedly. Here is the recipe.

First heat ghee in a pan and add cinnamon, cardamom and cloves. Add chopped onion and fry until light brown. Add ginger paste and stir for a while, then add the keema. Mix in mace powder and nutmeg paste and cook for 4 to 5 minutes.

Now add the rice and fry for 2 to 3 minutes. Add boiling water and salt to taste. Scatter a few green chillies on top and cook for 5 minutes.

Then lower the heat and cover with a lid. After about 12 to 15 minutes, open the lid and check that the water has dried up. If you like, keep it covered on dum for another 5 minutes. Scatter fried onions on top when serving.
