Recipe: Jackfruit Seed Bharta

Jackfruit seed bharta, a traditional mash made with mustard oil, chillies and onion, is easy to prepare in the jackfruit season and goes well with hot rice.

Among Bangladesh's traditional and popular bhartas (mashes), jackfruit seed bharta holds a special place. With the seeds easily available in the jackfruit season, a tasty and nutritious bharta can be made very simply.

It has long been valued in rural home cooking. Made with mustard oil, green chillies and onion, jackfruit seed bharta tastes excellent with hot rice. Here is how to make it with just a few ingredients.

Method


Jackfruit seed bharta can be made in two ways: by dry-roasting the seeds or by boiling them. Roast or boil the seeds as you prefer, then remove the thin red skin on the seeds.

Next, fry the dried chillies in a little mustard oil until crisp. Mash the fried chillies and salt thoroughly into the chopped onion, then add mustard oil.

Finally, blend the peeled seeds, or grind them on a stone slab (pata). Mix everything together well, and the jackfruit seed bharta is ready. Serve with hot rice.
