Almost everyone likes eating pickles made from green mangoes. Now is the time to make various dishes with green mangoes and store them for the whole year. You can also make green mango candy to enjoy all year round. Here is the recipe.
Ingredients
- 4 green mangoes (large)
- Half a teaspoon of salt
- 400g sugar
- A little powdered sugar
Method
Peel the mangoes, discard the stones and cut them into long slices. The pieces should be neither too thick nor too thin. Put a pan on the stove, add enough water and half a teaspoon of salt.
When the water boils, add the cut mangoes. Cover and boil them; they will be done after 2 to 3 minutes on the heat.
Make sure the mango does not overcook and turn mushy, nor stay hard. Pour the boiled mango into a sieve to drain the water.
Put the mango in a bowl and add sugar while it is still hot. For the amount of mango you get after cutting one kg of mangoes with skin and stone, add 400g of sugar. In the same way, add 200g of sugar for 500g of mango.
After a while you will see that the sugar has melted into syrup. Leave the mango pieces in this syrup for 6 to 7 hours.
Lift them out of the syrup onto a plate or tray brushed with mustard oil and dry them in strong sun for 2 to 3 days. Turn the pieces over from time to time, so that they dry on both sides but stay quite soft inside.
Storing
Now mix the dried mango with powdered sugar. Once it has cooled, keep it in an airtight box or jar in the normal part of the fridge or outside the fridge.
Before putting it in the box, lay a tissue at the bottom, place the mango on it and cover with another tissue. It will keep even better that way.
