An egg omelette packed with chopped vegetables is a quick, protein-rich alternative to fried snacks in the morning or evening.

In the morning rush many people cannot eat a proper, nutritious breakfast. In the afternoon, when hunger strikes and they don't know what to eat, many turn to fried food.

What is needed is a snack that is quick to make and full of nutrition. Eggs are easy to cook and supply the protein the body needs, and adding some vegetables improves both the taste and the nutritional value.

Ingredients


  • Eggs: 2
  • Chopped onion: 2 tablespoons
  • Chopped tomato: 2 tablespoons
  • Chopped carrot: 2 tablespoons
  • Chopped green chillies: 1–2
  • Chopped coriander leaves: 1 tablespoon
  • Salt: to taste
  • Ground black pepper: a little
  • Oil or butter: 1 tablespoon

Method


Break the eggs into a bowl and beat them well. Mix in the chopped onion, tomato, carrot, green chilli and coriander. Add salt to taste and a little ground black pepper. Heat the oil or butter in a pan and pour in the egg mixture.

Over medium heat, when one side is cooked, turn it over and cook the other side. When both sides are cooked through, take it off the heat. This tasty snack can be eaten with toast or bread.
