For many people, fries mean golden, crispy pieces of potato. But a little variety in the kitchen brings a new surprise in taste.
This time you can make a wonderfully crisp fry with okra instead of potato, crunchy outside and soft and tasty inside. Quick to make, it can be the centre of attention not only as an afternoon snack but also when entertaining guests. If you want a different taste, this recipe is worth trying at least once.
First wash the okra well and let the water drain; wipe it with tissue if needed. Cut it into thin, long pieces. Sprinkle the cut okra with salt, chilli, turmeric, rice flour and cornflour and mix lightly, tossing so that the pieces do not stick together.
Once coated, heat oil in a karahi. Scatter in the okra a little at a time and fry on a medium flame, stirring as little as possible, until just before it turns brown. Add green chillies. When it is crisp, take it out, sprinkle with lime juice and a little roasted cumin powder, and serve hot.
