Fish roe fritters to eat with hot rice: a recipe

Roe found inside a market fish, or bought on its own, can be turned into crisp fritters with gram flour, onion, green chilli and spices.

Fish bought at the market often come with roe inside, and some people buy roe on its own. It makes tasty fritters (bora) that go well with hot rice.

Ingredients: 200 grams fish roe, one chopped onion, chopped ginger and garlic, chopped green chillies, gram flour (besan), chopped coriander leaves, turmeric powder, chilli powder, a little baking soda, salt to taste and oil for frying.

Wash the roe well and drain the water. Add the onion, green chilli, ginger and garlic, turmeric and chilli powder and the gram flour, and mix thoroughly. Then add the baking soda, salt and coriander leaves and mix again.

Heat oil in a pan and stir a little of the hot oil into the batter. Drop the mixture into the hot oil a little at a time and fry the fritters well on both sides.

When all the fritters are fried, arrange them on a plate and serve with homemade sauce.
