Most people love broiler chicken dishes in one form or another, and chicken shawarma is one of the quick-to-make, flavour-packed favourites. Its combination with soft bread has made it popular with young and old alike. Broiler chicken shawarma can be a great choice for an afternoon snack or for entertaining guests.
Many people usually buy it from restaurants or food courts. But with very little time, a few simple ingredients and a little care, you can make delicious restaurant-style broiler chicken shawarma at home. Make it today to surprise the family.
Marinate and cook the chicken
First wash the boneless chicken pieces well and drain them. In a large bowl, mix the chicken with yoghurt, ginger-garlic paste, lemon juice, ground black pepper, garam masala, chilli powder and salt to taste, and coat well. Cover and marinate for at least 30 minutes so the spices get well into the meat.
Heat oil in a pan and add the marinated chicken. Cook covered over a medium flame. When the water released by the meat has dried up and the meat is fully cooked, fry for a few more minutes. When the meat has light golden or charred marks, take it off the heat and slice it thinly or shred it.
Sauce and salad
Now make the shawarma sauce. In a small bowl, whisk mayonnaise, chopped garlic, lemon juice and a little sugar. For a milder taste you can also mix in a little yoghurt.
In another bowl, mix chopped cucumber, tomato and onion lightly with a little salt and lemon juice to make a salad.
Assemble and serve
Warm pita bread or ordinary flour roti slightly. Spread the sauce evenly over each one, then put the fried chicken and the salad on one side.
Finally, roll the bread up tightly. To make serving easier, wrap the bottom of the roll in tissue paper or foil. Make all the shawarmas this way and serve with tomato sauce, chilli sauce or extra garlic sauce.
