Serve Guests a White Chicken Bhuna

A mild, pale-coloured chicken bhuna offers a traditional yet different dish for the table when guests visit.

When guests arrive, a Bengali household always wants the meal to be a little special. If, among the polao, roast and korma, you want a dish with a different taste that still stays close to tradition, a white chicken bhuna (shada bhuna) can be an excellent choice. It is low on chilli heat, pale in colour and unique in flavour. Here is the recipe.

Marinating the chicken


First cut the chicken, clean and wash it well, and let the water drain off. Then crush whole onions, ginger, garlic and green chillies together. Mix all these ingredients thoroughly into the meat and leave it to marinate for 2 hours.

Cooking


Once the meat has marinated, put a karahi on the stove and add oil. Add the marinated chicken and cook on high heat for 5 minutes, then lower the heat. Cook on medium heat until the meat is tender, stirring now and then if needed so it does not stick to the pan.

When the meat is coated in a thick sauce, add garam masala powder and take it off the heat. Your white chicken bhuna is ready.
