Chicken chukuni is a different kind of dish with a local flavour. The heat of the spices, a sour-sweet taste and tender chicken make it very tempting. The name may be new to many, but once tasted it is not easily forgotten. It can be made easily with household ingredients and goes well with rice, roti or polao.
First marinate the chicken with ginger-garlic, turmeric, Kashmiri chilli powder, lemon juice and salt. After one hour, fry the chicken in a little oil. Then mix the fried chicken well with sliced onion, green chillies and coriander leaves.
Separately, mix sour yoghurt with garlic paste, salt and sugar. In another pan, heat mustard oil, temper it with fenugreek and dried chillies, add a little turmeric and chilli powder, and pour it over the yoghurt.
Finally, mix the tempered yoghurt well into the chicken mixture, and the chicken chukuni is ready.
