Chepa shutki means a distinctive strong aroma and the magic of a homely taste. When it is combined with various vegetables, the dish becomes even tastier and more appetising. In this recipe we learn how to make "chepa shutki vegetable bhuna" easily at home — a dish full of heat, gravy and aroma that also recalls the true taste of rural Bengal.
Preparing the shutki and spices
First lightly toast the chepa shutki on a griddle, clean and wash it well, then grind it into a paste. Wash all the vegetables thoroughly, cut them into small pieces and lightly fry them in oil. Now heat oil in a pan and add half a cup of chopped onion. Add ginger, garlic, bay leaf, salt, turmeric and the ground chepa shutki, and fry everything well.
Finishing the dish
When the spices are well fried, add the fried vegetables and half a cup of water. If you like it hot, add slit green chillies; for less heat, add the chillies whole. When the vegetables are soft and well coated, temper the dish with a little more chopped onion, chopped garlic, dried chilli, whole cumin and mustard oil. Then take it off the heat and serve hot with rice.
