Cauliflower is good not only for health but also for flavour. Cooked as a korma, it brings together spices, coconut and cream in a soft, tasty and tempting dish. Light and nutritious, it makes a perfect meal with rice or roti, and people of all ages will enjoy it. Here is the recipe.

Method

First cut the cauliflower into florets and wash them. Heat oil in a pan and fry chopped onion until golden. Add ginger and garlic and fry for 1–2 minutes, until the raw smell goes. Then add tomato, ground coriander and ground cumin and cook the mixture well. Add the cauliflower and fry for 5 minutes. Once it is fried, add yoghurt and coconut.

Add a little water if needed, cover and cook for 10 minutes so that the cauliflower turns soft. Finally add salt to taste and stir gently. When the korma is done, sprinkle with coriander leaves and serve hot.
