A barbecue on a winter evening is a celebration in itself, and there is nothing like enjoying fire-grilled food under the open sky with friends and family. Fish and meat barbecues are usually more popular, but a barbecue made with vegetables is no less tasty or nutritious. Light, healthy and colourful, it adds something different to a winter gathering.
Ingredients
- Cauliflower: 1
- Broccoli: 1
- Capsicum: 2
- Carrot and baby corn: 1 cup
- New potatoes: 6
- Large pieces of tomato and onion: 1 cup
- Lemon juice: 4 tablespoons
- Olive oil: 2 tablespoons
- White pepper powder: 2 teaspoons
- Garlic: 1
- Yoghurt: 4 tablespoons
- Barbecue sauce: 1 tablespoon
- Barbecue spice powder: 1 tablespoon
- Chilli flakes: to taste
- Salt: as needed
Method
First wash the vegetables well and cut them to the size you like. In a bowl, mix together the olive oil, crushed garlic, lemon juice, barbecue spice, salt, pepper, chilli flakes, barbecue sauce and yoghurt. Put the cut vegetables in a large bowl and coat them well with this mixture. Leave them to marinate for 30 minutes to an hour so the flavour gets right inside.
Next, preheat the grill to medium-high heat and grease it with a little oil. Put the marinated vegetables directly on the grill or thread them on metal skewers. Grill each side for 3-5 minutes, until the vegetables are soft and nicely charred. When they are done, sprinkle a little fresh coriander on top and serve hot.
