A cloudy sky, light rain and a hot cup of tea: at a time like this the mind craves something tasty, and fried snacks seem even more tempting.
One of the most popular snacks for this weather is the pakora. It can be made quickly with simple ingredients and tastes great served hot. Here are three recipes.
Lentil pakora
Ingredients:
- Red lentils (masoor dal), half a cup, soaked
- Onion, 1, chopped
- Green chillies, 2-3, chopped
- Coriander leaves, 1 tablespoon, chopped
- Salt to taste
- Turmeric powder, a little
- Oil for frying
Method: Blend the soaked lentils into a coarse paste. Mix in the onion, green chillies, coriander leaves, salt and turmeric. Heat oil in a pan, drop in small portions of the mixture and fry. Remove when golden.
Mixed vegetable pakora
Ingredients:
- Gram flour (besan), 1 cup
- Potato, half a cup, chopped
- Carrot, half a cup, chopped
- Onion, 1, chopped
- Green chillies, 2, chopped
- Coriander leaves, 1 tablespoon, chopped
- Salt to taste
- Chilli powder, a little
- Water as needed
- Oil for frying
Method: Put the gram flour in a bowl and add water to make a thick batter. Mix in all the chopped vegetables, salt and chilli powder. Heat oil in a pan, add spoonfuls of the mixture and fry. Remove when crisp.
Green chilli pakora
Ingredients:
- Large green chillies, 6-8
- Gram flour (besan), 1 cup
- Salt to taste
- Turmeric powder, a little
- Chilli powder, a little
- Water as needed
- Oil for frying
Method: Wash the chillies and make a light slit down the middle. In a bowl, mix gram flour, salt, turmeric and chilli powder with water to make a batter. Dip the chillies in the batter and fry in hot oil. Remove when golden and crisp.
Serve hot with tea. They can also be eaten with tomato sauce or chutney.
