Many people do not know that ordinary soybean can be used to make a tasty, nutritious dish with a completely different flavour. If you want the taste of an omelette without eggs, soybean can be a great alternative. When a vegetarian soybean omelette, lightly crisp outside and soft and spicy inside, goes into a hot, spicy curry, it becomes a unique taste experience.
The dish can be served with rice, roti or paratha. It is nutritious for vegetarians and the health-conscious, and easy to make at home. Here is a simple recipe for soybean vegetarian omelette curry.
Method
First boil the soybean in salted water and drain. Mash boiled potato in a bowl. Separately, blend tomato, ginger, green chilli and coriander leaves. Heat oil in a pan and temper half a teaspoon of cumin. Add half of the spice paste, then add the soybean and boiled potato and fry them with the spices. Add salt to taste, then blend the whole mixture.
Dip papad in water and drain. Fill with the soybean mixture and fold into squares so that they look like cut pieces of omelette. Fry them in mustard oil, turning them over.
Heat oil in a pan and temper cumin, bay leaf and dried chilli. Add the tomato-ginger paste. Add turmeric, salt and chilli powder, fry the spices, then add some hot water, lower the heat and bring to a simmer. Add the soybean omelettes and cook on low heat for another five minutes. The vegetarian omelette curry is ready. Sprinkle a little chopped coriander on top and serve.
