Biryani is almost an unwritten rule on the menu for Eid or any special day. But if you want to serve something a little different and regal beyond the familiar taste, you can make shahi reshmi beef stroganoff biryani.
Made with a fine blend of beef coated in mild spices, creamy stroganoff sauce and fragrant basmati rice, this biryani is as rich in flavour as it is tempting to look at. This special restaurant-style dish can easily be made at home. Here is the recipe.
Preparing the stroganoff gravy
First cut the beef into thin slices, wash it clean and let the water drain off. Marinate the meat well with yoghurt, ginger-garlic, black pepper, garam masala and salt, and leave it to rest for an hour. Meanwhile, fry onions in ghee in a pan to make crisp beresta and set them aside.
Then add the meat, capsicum, carrot, cabbage and mushroom to the same ghee. When the meat is cooked, stir in cream to make a thick stroganoff gravy.
Layering and dum
Now add the ingredients to a pot slowly in layers: first the rice, then the meat gravy, and on top of that the fried onions and saffron milk. Make another layer in the same way with rice, meat gravy, fried onions and saffron milk.
Cover and cook on dum over a low flame for 30 minutes. Finally, scatter cream and coriander leaves on top and serve the delicious shahi reshmi beef stroganoff biryani.
