Semolina and vegetable pancakes, made without oil, are a healthy and tasty alternative to fried snacks with afternoon tea or for breakfast.

Everyone fancies something tasty with a hot cup of afternoon tea, but eating fried food every day is not good for the body. Instead you can easily make semolina and vegetable pancakes without any oil. They are healthy as well as tasty, and a good option with afternoon tea or for breakfast.

First mix semolina, sour yoghurt and water in a bowl and leave for 10 to 15 minutes so the semolina swells. Then add onion, carrot, capsicum, green chilli, chopped coriander leaves, salt and ground black pepper and mix well. You can add a pinch of baking soda to make the pancakes softer; if you do not have any, leaving it out will not change the taste.

Now heat a good non-stick pan over a medium flame. Without any oil, pour in a large spoonful of batter and spread it into a circle. Cover and cook for 3 to 4 minutes. When the underside turns golden, flip it and cook for another 2 to 3 minutes. Make the rest the same way.

Serve the pancakes hot with tomato sauce or coriander chutney. With a hot cup of tea they taste wonderful.
