As soon as ripe mangoes reach the market, many people buy a lot at once and put them in the fridge. But within a few days the mangoes turn soft and the stem end goes black and rots. Often mangoes do not keep well even in the fridge, so it is important to know the right way to store them.
Buy with care
The first step in storing mangoes is to be careful when buying. Choose mangoes that are just starting to ripen rather than fully ripe ones. Very soft mangoes spoil quickly and do not keep well even in the fridge. It is better to let half-ripe mangoes ripen slowly at room temperature.
Not all mangoes need to go in the fridge. Kept at room temperature in a dry, shady place, they often last longer. A corner of the kitchen or a spot under the bed can be used for storage. A place out of direct sunlight is best.
Keep them apart and let them breathe
Ripe mangoes should never be wrapped in plastic bags, as moisture builds up inside and they rot quickly. Use paper bags or a basket instead. Do not keep all the mangoes together; set the riper ones apart, because the gas they give off makes the others ripen faster too.
Ripe mangoes release a natural gas, ethylene, which quickly ripens the mangoes around them. So keep very ripe mangoes separate. Mangoes can also be kept in a rice container, which absorbs moisture and helps them keep relatively well.
Freeze for the long term
For longer storage, mangoes can be cut into small pieces and kept in the freezer in zip-lock bags. It is better to freeze the pieces separately on a tray first and then put them in bags. That way mango can be used in juices, smoothies or desserts all year.
Stored the right way, ripe mangoes do not spoil quickly and keep their flavour. With a little care, this favourite summer fruit can be enjoyed for a long time.
