No Meat Today: Make the Roast with Prawns

A simple recipe for prawn roast, a change from the usual chicken, beef or mutton roast.

Bored with meat roast? Try something different today. Prawn roast is here to break the idea that a roast must mean chicken, beef or mutton. Made with firm prawns, a thick spiced gravy and a gentle heat, this roast tastes different and is easy to make. Whether for guests or for something special for the family, this dish proves a roast can be made without meat. Here is the recipe.

First put the prawns in a large bowl and coat them with yoghurt, onion paste, ginger paste, garlic paste, coconut paste, green chilli paste, black pepper powder and salt to taste. Leave to marinate for 15 minutes.

Meanwhile, heat oil and ghee together in a karai and add whole garam masala for tempering. Lift the marinated prawns out of the spice mix and fry them lightly. When they are fried, add the rest of the marinade and cook well. Once it is well cooked, sprinkle ghee and fried onion (beresta) on top and mix well. Then turn off the heat and leave covered for 5 minutes. The tempting golda prawn roast is ready.
