Many people eat too much fried food at iftar, leaving them feeling heavy or uncomfortable afterwards. That is why it is important to have light but nutritious food on the iftar table, and an oats omelette made with eggs, oats and various vegetables can be just such a healthy dish.
It offers a good combination of protein and fibre, which gives the body energy and is relatively easy to digest. Here is the recipe.
Ingredients
- Oats: 1 cup
- Chopped onion: 2 tablespoons
- Chopped tomato: 1 tablespoon
- Chopped coriander leaves: 2 tablespoons
- Chopped green chilli: 1 teaspoon
- Eggs: 2
- Soybean oil: 50 grams
- Turmeric powder: 1 pinch
- Dried chilli powder: half a teaspoon
- Salt to taste
Method
First put the chopped onion, tomato, coriander leaves, green chilli, turmeric powder, dried chilli powder and salt together in a bowl. Break in the two eggs and mix all the ingredients well.
Add the oats to the mixture, stir again and leave it for about 10 minutes so that the oats soften.
Heat the oil in a frying pan, pour in the prepared batter and fry over a medium flame. When one side is done, carefully flip it and fry the other side. Take it off the heat when both sides are golden.
Serve the healthy and tasty oats omelette hot. You can serve it with tomato sauce or salad if you like.
