Did you know goat meat is not only for jhol or kosha but can also be made into a bharta? Surprising as it sounds, this bharta has its own history and taste in rural Bengali kitchens. Made with steaming boiled meat, the bite of green chillies, the sharp aroma of onion and garlic and a touch of mustard oil, it is unforgettable once tasted. For those looking for new flavours or who love bharta, goat meat bharta can be a very different surprise. Here is the recipe.

First wash and clean the goat meat well and boil it with ginger-garlic paste, salt and black pepper. When the meat is well cooked, pound it thoroughly. Now heat oil and ghee in a karahi and temper with cumin, chopped dried chillies, bay leaf and curry leaves.

Then add the meat, chopped green chillies and garam masala powder to the karahi and stir-fry well. When the oil separates from the masala, mix in tamarind extract and chopped coriander leaves. Finally, check the salt and add salt and sugar to taste if needed. Your goat meat bharta with a different taste is ready.
