Mola fish chorchori is a unique taste of Bengali home cooking: made with simple ingredients but full of flavour. This traditional village dish goes wonderfully with rice, and its hot, spicy taste lingers on the tongue. Here is how to make delicious mola fish chorchori quickly and simply.

First cut and clean the mola fish well, wash it and drain off the water. Mix the fish well with chopped onion, turmeric powder, red chilli powder, coriander powder, garlic paste and salt to taste, then leave it to rest for 10 minutes.

Meanwhile heat one tablespoon of mustard oil in a karai and add the spiced mola fish. Cover and cook over a low flame, opening the lid now and then to stir so it does not stick, taking care that the fish do not break. No water needs to be added to this dish. When the fish is cooked and the oil rises to the top, add green chillies. Your tasty mola fish chorchori is ready.
